Dragon Fruit

Happy Easter everyone! I failed to put an uncooked egg in Mark's shoe. But on the bright side, while many of you were sipping hot chocolate and looking at 2 feet of snow outside your frosty windows, I was laying by the pool and playing frisbee at the park! Let me get in my gloating while I can. Come July when it's too hot to walk to the pool and the only time you can go outside without throwing up is between 4:00 and 6:00 AM, I'll be begging to be where it's cooler!

A few years ago I came across the most beautiful fruit at this corner fruit stand in the middle of nowhere after visiting an alligator farm in Florida. Random? I would say so. I bought the fruit and was in love with not only the outside, but the inside, and how juicy and tasty it was! I have never seen one since until tonight I was reading an article on the many health benefits of dragon fruit at this lovely blog I discovered. Mark and I are getting ready to go to California soon and along with surfing, getting a tan, and enjoying the beach, I plan to track down some dragon fruit to bring home!
